Perhaps the most unappealing photo cover for a in the history of cookbooks the food isn t even cooked but jam packed with plenty of excellent recipes from across N Africa Morocco, Algeria, and Tunisia I especially liked how this book had recipes from Algeria and Tunisia which can sometimes be hard to come by It should be noted that there are sections for Sephardic recipes from each country Might not be the best N African especially Moroccan cookbook out there but it does have it s fill of keeper [...]

The majority of the recipes in here aren t even couscous recipes There wasn t a single one for Israeli pearl couscous And the recipes for couscous all require a couscousier, a Berber style pot where you cook the broth meat vegetables in the bottom, and steam the couscous in the top Who owns a couscousier Bottom line, this is an authentic couscous cookbook, not terribly useful for lazy, crockery lacking dilettantes like me.

For a book titled Great Book of Cousous, one would think the majority of the recipes would be, well, about couscous Not so, apparently I d say 40% of the recipes are couscous, 50% are variations on lamb stew, and 10% are salads Not what I was expecting Vegetarians stay away There s nothing in here for us.
